Heat never tasted so good

by benjamin on February 8th, 2013

I don't often find myself at the corner of Adelaide and John, but luckily for me, that's exactly where I was tonight. And, while dark staircases leading to darker basements don't tend to conjure notions of culinary excellence, that's precisely what I found at Burger Brats.

I ordered the Firehouse burger. It came with some fairly standard toppings. Nothing earth shattering – cheddar, jalepeƱos, grilled onions, lettuce, tomato, house chipotle mayo – but delicious all the same. Of course, I asked them to hold the lettuce.

The burg was excellent. The patty patty was full flavoured, and married perfectly with the toppings. However, the bun; the bun was a completely unexpected surprise.

The bun had a flavour and texture that I've never experienced before, and I'm still struggling to pin it down. There was a something about it that was somewhat reminiscent of a focacia, but as anyone who knows me know, it's my opinion that foccacia is the worst possible candidate for a burger bun. I tends to be tough, requiring a great deal of effort to get through, which is a disaster when it comes to burgers. Burger buns need to be firm enough to hold their shape, while being fluffy and soft enough to compress. To soft and the burger falls apart. Too firm, and eating becomes uncomfortable, and the texture of the patty is overwhelmed.

However, somehow Burger Brats managed to deliver a bun that had a slightly more hearty texture and flavour, but which also compressed perfectly, and was in no way tough. I was impressed.

My only complaint would be the amount of heat. I can handle my spice, but halfway through the burg, the head from the jalapeƱo seeds started to overwhelm the other flavours. Some balance was lost.

But maybe it was on purpose because the heat compelled me to order a vanilla shake, which turned out to be that absolute best milkshake I have ever had.

I'll need to have a few more burgs from Burger Brats, but I feel confident in saying that they offer some of the best burgs in the city, and every derbist owes it to themselves to check them out!
